Ingredients:
- 1 lb beef (ground or shredded roast)
- 1 lb Yukon Gold potatoes, diced
- 2 medium carrots, peeled & diced
- 1 small onion, diced
- 2 tbsp Worcestershire Sauce
- 2 garlic cloves, minced
- ½ tsp dried rosemary
- ½ tsp dried thyme
- Salt & pepper to taste
Dough:
- 3 cups all-purpose flour
- 1 stick chilled unsalted butter
- 1 tsp salt
- 2 egg yolks (divided)
- ½ cup cold water
Instructions:
- Prepare the Dough:
- Mix flour and salt.
- Add chilled butter until crumbly.
- Blend water and 1 egg yolk, then mix into the flour.
- Chill for 30 minutes.
- Prepare the Filling:
- Brown the beef and season.
- Sauté vegetables until nearly tender.
- Add herbs and combine with beef.
- Shape the Pasties:
- Divide dough into six portions and roll into circles.
- Moisten edges, add filling to one side, fold, and seal.
- Bake:
- Preheat oven to 400°F (200°C).
- Line a tray with parchment or foil.
- Place pasties on tray, cut slits for ventilation.
- Brush with remaining egg yolk.
- Bake for 35-40 minutes until brown.
- For Freezing:
- Partially bake for 20 minutes, then freeze.
- When ready, brush with egg wash and bake an additional 20 minutes.
